Down in South Holland, the town of Gouda came up with their own style of semi-soft, creamy cheese. It too
spends a good part of its life sitting on a shelf, wrapped in wax, growing up. This young cheese (as opposed to Aged Gouda) is smooth, creamy and slightly nutty.
